Today's workout was an hour walk on my treadmill. I kept it at a pace of 3.5 and I did intervals...I started at no incline for 10 minutes followed by incline at 7 for 10 minutes, then no incline, then incline of 8 etc. It was a pretty good workout because I can already feel my glutes getting pretty sore (Thank JESUS)! For some reason though my body is craving CARBS! I am not sure if it's just because its close to that time or what, but it's slightly obnoxious.
After I picked Caden up from school today I took him and Kaylee to Starbucks for snack time because I am SO excited that they have their Peppermint Mocha's out and that it comes in the beautiful holiday cup all of us coffee lovers anxiously await year round' (I know I'm not the only odd ball out there).
After ordering heaven in a cup, we headed to the grocery store to make this amazing meal:
Foil-Pack Chicken & Artichoke

What You Need:
3 cups instant white rice, uncooked
3 cups warm water
6 small boneless skinless chicken breast halves (1-1/2 lb.), 1/2 inch thick
1 can (13-3/4 oz.) artichoke hearts, drained, quartered
2 large tomatoes, chopped
1/2 cup KRAFT Zesty Italian Dressing
1/4 cup pesto
Make It: HEAT oven to 400°F. MIX rice and water; spoon onto centers of 6 large sheets heavy-duty foil. Top with chicken, artichokes and tomatoes; drizzle with combined dressing and pesto. BRING up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside. Place in 15x10x1-inch pan. BAKE 30 to 35 min. or until chicken is done (165°F). Remove packets from oven; let stand 5 min. Cut slits in foil with sharp knife to release steam before opening.

 I made the following changes: **I did NOT use artichokes **I only used 1 cup of brown rice and half a cup of the combined: chicken broth, lemon juice, red glaze with roasted peppers, and cilantro **I marinated my chicken for half an hour in a Bruschetta Italian dressing and I topped with fresh tomatoes, onions, salt and pepper So ya, I fudged the recipe a bit but it smells amazing and I'll be sure to report on how it turned out!
